In the realm of quick and delectable snacks, charred corn and black bean nachos offer a delightful combination of textures and flavors. These nachos feature crispy tortilla chips generously topped with melted cheese, charred corn, and seasoned black beans, complemented by fresh jalapeños. The dish is versatile, allowing for personal touches such as the addition of tomatoes, avocado, or extra spices to suit individual tastes.

To prepare this dish, first focus on the corn. Using two ears of corn, remove the kernels and heat a large frying pan over high heat. Cook the kernels for about five to ten minutes, stirring occasionally until they achieve a deep char. Transfer the charred corn to a large bowl. Next, in the same pan, add two tablespoons of vegetable oil, followed by 200 grams of canned black beans that have been drained and rinsed. Add half a teaspoon of lightly crushed cumin seeds, and season with sea salt and freshly ground black pepper. Cook the beans over high heat for around five minutes until they become slightly crisp and start to pop.

Combine the cooked beans with the charred corn. Finely grate the zest of one lime over this mixture, and then squeeze in the juice of one and a half limes. Incorporate most of the chopped fresh coriander and the finely chopped jalapeños. Mix everything thoroughly, adjusting seasoning with additional lime juice, salt, or pepper if needed.

Preheat the grill to high. Spread 200 grams of tortilla chips evenly on a baking tray, and sprinkle with 75 grams of grated mozzarella and 100 grams of grated mature cheddar. Place the tray under the grill for a few minutes, watching closely to ensure the cheese melts and becomes bubbly without burning. Once ready, transfer the hot nachos to a serving platter. Top the cheesy chips with the charred corn and black bean mixture, and add small dollops of sour cream.

Finish the dish by garnishing with the remaining coriander and chopped jalapeños. Serve immediately for the best taste. For those seeking a bit of extra freshness, diced ripe tomatoes or guacamole can be added. Additionally, spices like smoked paprika or crushed coriander seeds can be mixed with the beans for enhanced flavor depth.
